Aloo Paratha Recipe – How to Make Perfect Indian Potato Stuffed Paratha
Aloo Paratha is one of the most popular North Indian flatbreads, made by stuffing whole wheat dough with a spicy and flavourful potato filling. The stuffed dough is rolled out and cooked on a hot tawa until golden, crisp and lightly charred. Traditionally served with curd, butter, pickle or chutney, aloo paratha is a comforting meal enjoyed for breakfast, lunch or dinner.
The secret to a delicious aloo paratha lies in the filling and the dough. The potatoes should be well mashed without large lumps, while spices, green chilli, coriander and other seasonings add depth to the stuffing. With a few simple techniques, you can make soft, flavourful and perfectly stuffed aloo parathas at home.

- 2 cups whole wheat flour
- ½ teaspoon salt
- 1 teaspoon oil or ghee
- Water, as required

- 1 teaspoon grated ginger
- 2 tablespoons fresh coriander, chopped
- ½ teaspoon cumin seeds
- ½ teaspoon red chilli powder
- ½ teaspoon garam masala
- ½ teaspoon amchur powder
- ¼ teaspoon turmeric powder
- Salt to taste

- Ghee or oil, as required

How to Make Aloo Paratha
Step 1: Prepare the Dough
Add whole wheat flour and salt to a large bowl. Add oil or ghee and mix well.
Gradually add water and knead until you get a soft, smooth dough. Cover it and let it rest for around 15–20 minutes.
Step 2: Prepare the Potato Filling
Boil the potatoes until completely cooked. Allow them to cool, peel them and mash thoroughly.
Add green chilli, ginger, coriander, cumin seeds, red chilli powder, garam masala, amchur powder, turmeric and salt.
Mix everything thoroughly until the spices are evenly distributed. Make sure there are no large potato lumps, as they can make rolling difficult.
Step 3: Divide the Dough and Filling
Divide the dough into equal-sized balls. Prepare similar-sized portions of the potato mixture.
This makes it easier to create evenly stuffed parathas.
Step 4: Stuff the Paratha
Take one dough ball and flatten it slightly. Dust it with flour and roll it into a small circle.
Place a portion of the potato filling in the centre. Bring the edges of the dough together over the filling and seal it carefully.
Gently flatten the stuffed dough.
Step 5: Roll the Paratha
Dust the stuffed dough with a little flour and roll it gently into a round paratha.
Avoid applying too much pressure while rolling, as this can cause the filling to come out.
Step 6: Cook on a Tawa
Heat a tawa or flat pan over medium-high heat. Place the rolled paratha on the hot tawa.
Cook until small bubbles appear on the surface, then flip it.
Apply a little ghee or oil and cook both sides until golden brown spots appear and the paratha is properly cooked.
Repeat the process with the remaining dough and filling.
How to Serve Aloo Paratha
Freshly prepared aloo paratha tastes best when served hot.
You can serve it with:
- Plain curd or yoghurt
- Butter or ghee
- Mango pickle
- Mint chutney
- Coriander chutney
- Vegetable raita
- Dal or curry
A small serving of butter melting over a hot paratha is a classic combination.
Tips for Soft and Perfect Aloo Paratha
Use Properly Cooked Potatoes
Avoid overcooking the potatoes until they become excessively watery. Potatoes with too much moisture can make the filling difficult to handle.
Mash the Potatoes Smoothly
Large potato pieces can tear the dough while rolling. Mash the potatoes thoroughly for a smooth filling.
Don’t Overfill
Adding too much stuffing may cause the paratha to break while rolling. Use an appropriate amount of filling according to the size of the dough ball.
Cook on the Right Heat
A medium to medium-high temperature works well. Very high heat can burn the outside before the inside is cooked properly.
Rest the Dough
Allowing the dough to rest helps make it softer and easier to roll.
Variations of Aloo Paratha
Aloo paratha can easily be customised according to taste.
You can add finely chopped onions, grated paneer, fresh mint, ajwain, crushed coriander seeds or additional green chilli to the filling.
For a richer version, cook the paratha generously with ghee.
