Vada Pav Recipe – How to Make Mumbai Style Vada Pav at Home

Vada Pav is one of India’s most popular street foods, especially associated with Mumbai’s vibrant food culture. Often described as an Indian-style potato burger, it consists of a spicy potato fritter called batata vada, placed inside a soft pav and served with chutneys. The combination of a crispy, spiced exterior, soft potato filling and fluffy bread makes vada pav a simple yet satisfying snack.

Making vada pav at home is easier than it may seem. The recipe involves preparing a seasoned potato mixture, shaping it into balls, coating them in gram flour batter and deep-frying until golden. The fried vada is then placed inside a pav along with spicy garlic chutney and green chutney for the classic Mumbai-style flavour.

Ingredients for Vada Pav

For the Potato Filling

  • 4 medium potatoes, boiled and peeled
  • 1 tablespoon oil
  • ½ teaspoon mustard seeds
  • ½ teaspoon cumin seeds
  • 8–10 curry leaves
  • 2–3 green chillies, finely chopped
  • 1 teaspoon grated ginger
  • ¼ teaspoon turmeric powder
  • 2 tablespoons fresh coriander, chopped
  • ½ teaspoon lemon juice
  • Salt to taste

For the Batter

  • 1 cup gram flour (besan)
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chilli powder
  • A pinch of asafoetida
  • Salt to taste
  • Water, as required
  • Oil for deep frying

For Serving

  • 6–8 pav buns
  • Green chutney
  • Dry garlic chutney
  • Sweet tamarind chutney, optional
  • Fried green chillies, optional

How to Make Vada Pav

Step 1: Prepare the Potato Filling

Boil the potatoes until tender. Peel them and mash them lightly, keeping the mixture slightly textured rather than completely smooth.

Heat oil in a pan. Add mustard seeds and cumin seeds. Once they begin to crackle, add curry leaves, chopped green chillies and grated ginger.

Add turmeric powder and stir briefly. Add the mashed potatoes and salt, then mix everything thoroughly.

Turn off the heat and add fresh coriander and lemon juice. Allow the mixture to cool.

Step 2: Shape the Potato Vadas

Once the potato mixture has cooled, divide it into equal portions.

Roll each portion between your palms to form a smooth ball. Keep the potato balls aside while you prepare the batter.

Step 3: Prepare the Besan Batter

Add gram flour to a mixing bowl along with turmeric powder, red chilli powder, asafoetida and salt.

Gradually add water and whisk until you get a smooth, medium-thick batter. It should be thick enough to coat the potato balls evenly without becoming excessively heavy.

Step 4: Fry the Batata Vada

Heat oil in a deep pan over medium heat.

Dip each potato ball into the gram flour batter, making sure it is completely coated. Carefully place it into the hot oil.

Fry the vadas until they become golden and crisp on the outside. Turn them occasionally so they cook evenly.

Remove them from the oil and place them on a paper towel or rack to drain excess oil.

Step 5: Assemble the Vada Pav

Take a pav and slice it horizontally without cutting all the way through.

Spread green chutney and dry garlic chutney inside the pav. Add a hot potato vada in the centre.

You can also add sweet tamarind chutney according to your preference.

Serve immediately with fried green chillies for a traditional street-food-style experience.

How to Make Dry Garlic Chutney

Dry garlic chutney is an important part of Mumbai-style vada pav.

You can prepare it by grinding together:

  • 8–10 garlic cloves
  • ½ cup roasted peanuts
  • 2–3 tablespoons grated dry coconut
  • 1–2 teaspoons red chilli powder
  • Salt to taste

Grind the ingredients into a coarse powder. Store it in an airtight container and use it as required.

Tips for Crispy Vada Pav

Keep the Batter at the Right Consistency

A batter that is too thin may not properly coat the potato filling. A moderately thick batter gives the vada a better outer layer.

Don’t Fry at Excessively High Heat

Very hot oil can brown the outside quickly while leaving the coating or filling unevenly cooked. Medium heat generally produces a crisp and evenly fried vada.

Serve Fresh

Vada pav tastes best when the potato vada is hot and crispy. Assemble the pav just before serving to prevent the bread from becoming soggy.

Popular Variations

Vada pav can be customised in several ways. Some versions include extra spicy chutney, cheese, schezwan sauce or additional fried ingredients.

For a traditional preparation, however, the combination of potato vada, pav, green chutney and dry garlic chutney remains the classic choice.
