How to Make Pav Bhaji
Step 1: Cook the Vegetables
Boil the potatoes, cauliflower, and green peas until soft. Drain the vegetables and mash them together. Keep them aside.
Step 2: Prepare the Masala
Heat butter and oil in a large pan or kadai.
Add the chopped onions and sauté until soft and lightly golden. Add ginger-garlic paste and green chili. Cook for another minute.
Add the chopped capsicum and cook for 2–3 minutes.
Step 3: Add Tomatoes and Spices
Add the chopped tomatoes and cook until they become soft and mushy.
Add turmeric powder, red chili powder, cumin powder, pav bhaji masala, and salt. Mix well and cook until the masala becomes thick and aromatic.
Step 4: Add the Vegetables
Add the mashed potatoes, cauliflower, and peas to the pan.
Pour in about ½ cup water and mix everything thoroughly.
Using a potato masher, mash the vegetables directly in the pan while they cook. Add more water if needed to achieve a thick but smooth consistency.

Sprinkle a little pav bhaji masala over the butter. Slice the pav horizontally and place them cut-side down on the tawa.
