Homemade Masala Dosa Recipe – Easy South Indian Breakfast

Masala dosa is one of the most popular South Indian breakfast dishes, loved for its crisp edges, soft centre and flavourful potato filling. A traditional masala dosa is made using a fermented batter of rice and urad dal, spread thinly on a hot tawa and cooked until golden and crisp. It is then filled with spiced potato masala and served hot with coconut chutney and sambar.

Making restaurant-style masala dosa at home is easier when the batter has the right consistency and fermentation. The potato filling can be prepared while the batter is fermenting, making this a practical breakfast for weekends and special family meals.

Masala Dosa Recipe at a Glance

Preparation Time: 30 minutes
Soaking Time: 4–6 hours
Fermentation Time: 8–12 hours
Cooking Time: 25–30 minutes
Servings: 4–6
Cuisine: South Indian
Course: Breakfast
Diet: Vegetarian

Ingredients for Dosa Batter

  • 2 cups dosa rice or idli rice
  • ½ cup urad dal
  • ¼ teaspoon fenugreek seeds
  • ¼ cup poha, optional
  • Salt to taste
  • Water as required
  • Oil or ghee for cooking

Rice and urad dal are traditionally soaked separately before grinding. Fermentation is an important step because it helps create the characteristic texture and slight tang of dosa.

Ingredients for Potato Masala

  • 4 medium potatoes
  • 1 large onion, thinly sliced
  • 1–2 green chillies, chopped
  • 1-inch piece ginger, finely chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon chana dal
  • 8–10 curry leaves
  • ½ teaspoon turmeric powder
  • A pinch of asafoetida
  • 2 tablespoons oil
  • Salt to taste
  • 2–3 tablespoons coriander leaves
  • Water as required

How to Make Dosa Batter

Step 1: Soak the Rice and Dal

Wash the rice and urad dal separately until the water becomes relatively clear. Soak the rice in plenty of water and soak the urad dal with fenugreek seeds.

Let them soak for around 4–6 hours.

Step 2: Grind the Ingredients

Drain the soaked ingredients. Grind the urad dal until light and smooth, adding water gradually.

Grind the rice separately into a smooth or slightly grainy batter. Combine both mixtures in a large bowl.

If using poha, soak it briefly and grind it along with the rice.

Step 3: Ferment the Batter

Add salt and mix the batter well. Cover the bowl and leave it in a warm place for approximately 8–12 hours, or until the batter has increased in volume and developed a mildly fermented aroma.

Before making dosa, gently mix the fermented batter. If it is too thick, add a little water to achieve a pouring consistency.

How to Make Potato Masala

Step 1: Cook the Potatoes

Boil the potatoes until completely tender. Allow them to cool, peel them and roughly mash or chop them.

Step 2: Prepare the Tempering

Heat oil in a pan. Add mustard seeds and allow them to splutter.

Add chana dal, curry leaves, green chillies and ginger. Sauté briefly without burning the spices.

Step 3: Add Onion and Spices

Add sliced onions and cook until they become soft. Add turmeric powder, asafoetida and salt.

Cook until the mixture is well combined.

Step 4: Add Potatoes

Add the boiled potatoes and mix gently. Add a small amount of water if the mixture feels too dry.

Cook for a few minutes until the potato mixture becomes moist but not watery. Finish with chopped coriander leaves.

The filling should be soft and easy to spread but should not have a gravy-like consistency.

How to Make Masala Dosa

Step 1: Heat the Tawa

Place a cast-iron or non-stick dosa tawa over medium heat. The tawa should be hot enough for the batter to spread and cook properly.

Step 2: Spread the Batter

Pour a ladleful of dosa batter into the centre of the tawa.

Using the back of the ladle, spread the batter quickly in circular motions from the centre towards the edges. Spread it thinly for a crispy dosa.

Step 3: Add Oil or Ghee

Drizzle a little oil or ghee around the edges and over the dosa.

Cook until the underside turns golden brown and the surface is no longer wet.

Step 4: Add Potato Filling

Place a portion of the prepared potato masala in the centre. Spread it lightly over the dosa if desired.

Step 5: Fold and Serve

Loosen the edges with a spatula and fold the dosa.

Serve immediately while it is hot and crisp.

What to Serve with Masala Dosa

Masala dosa is traditionally served with:

  • Coconut chutney
  • Tomato chutney
  • Sambar
  • Green chutney
  • Peanut chutney

A hot cup of South Indian filter coffee also makes a classic accompaniment for a dosa breakfast.

Tips for Crispy Masala Dosa

Get the Fermentation Right

Proper fermentation is one of the most important factors for achieving a light and crisp dosa. Keep the batter in a warm place and allow enough time for it to ferment.

Don’t Make the Batter Too Thick

A thick batter can result in a heavy dosa. Add water gradually if necessary until it reaches a smooth pouring consistency.

Spread Quickly

Pour the batter onto a properly heated tawa and spread it immediately in circular motions. A thin layer produces crispier results.

Don’t Overcook the Potato Filling

The potato masala should remain moist and soft. Excess water can make the dosa soggy.

Serve Immediately

Masala dosa tastes best straight from the tawa. Serve it immediately with hot sambar and chutney.

Variations of Masala Dosa

Once you master the basic recipe, you can try several popular variations.

Mysore Masala Dosa: Spread spicy red chutney over the dosa before adding the potato filling.

Butter Masala Dosa: Cook the dosa generously with butter for a richer flavour.

Cheese Masala Dosa: Add grated cheese along with the potato filling.

Paneer Masala Dosa: Use a spiced paneer mixture instead of or along with the traditional potato filling.

Onion Masala Dosa: Add finely sliced onions while cooking the dosa for extra texture and flavour.

Conclusion

This masala dosa recipe is a great way to recreate a classic South Indian breakfast at home. The combination of a crisp, golden dosa and flavourful potato masala makes it satisfying on its own, while sambar and coconut chutney complete the traditional meal.

The key to excellent homemade masala dosa is simple: prepare a well-fermented batter, make a moist potato filling, heat the tawa properly and spread the batter thinly. With a little practice, you can make crispy, delicious masala dosa just the way you like it.
