How to Make Baingan Bharta
1. Roast the Eggplant
Wash and dry the eggplant thoroughly. Make a few small slits in it and insert the garlic cloves into the slits.
Rub the eggplant lightly with oil.
Place it directly over a medium gas flame and roast, turning it every few minutes, until the skin becomes completely charred and the inside becomes soft.
This usually takes around 12–15 minutes.
No gas stove? Roast the eggplant in an oven at around 220°C (425°F) for 30–40 minutes, turning it halfway through.
2. Cool and Peel
Transfer the roasted eggplant to a plate and allow it to cool enough to handle.
Peel away the charred skin and remove the stem. Mash the roasted flesh with a fork or potato masher.
The roasted garlic can be mashed along with the eggplant.
3. Prepare the Masala
Heat oil in a large pan over medium heat.
Add cumin seeds and let them crackle. Add the chopped onions and sauté for 4–5 minutes, until they become soft and lightly golden.
Add the green chillies and cook for another minute.

4. Add Tomatoes and Spices
Add the chopped tomatoes, turmeric powder, red chilli powder, coriander powder and salt.
Cook for approximately 5–7 minutes, stirring occasionally, until the tomatoes become soft and the oil begins to separate from the mixture.
5. Add the Roasted Eggplant
Add the mashed roasted eggplant to the pan.
Mix thoroughly with the onion-tomato masala and cook for another 5–8 minutes over medium-low heat.
Add garam masala and mix well.
6. Garnish and Serve
Turn off the heat and garnish with freshly chopped coriander.
Serve hot with roti, naan, paratha or rice.
