How to Make Soft & Fluffy Mangalore Buns Recipe

Mangalore Buns are a popular sweet and fluffy breakfast snack from the coastal Karnataka region. Despite their name, these buns are not baked like regular bread. They are deep-fried, giving them a lightly crisp exterior while keeping the inside soft, airy, and slightly sweet. Ripe banana is one of the key ingredients and gives the buns their characteristic flavor and texture.

This traditional Mangalorean recipe is easy to prepare with everyday ingredients such as flour, banana, sugar, yogurt, and a little baking soda. The dough needs to rest before frying, which helps the buns become soft and puffy. They are delicious with coconut chutney, sambar, or a cup of hot tea or coffee.

Ingredients for Mangalore Buns

  • 2 ripe bananas
  • 2 cups all-purpose flour
  • 2–3 tablespoons sugar
  • 2 tablespoons yogurt
  • ½ teaspoon cumin seeds
  • A pinch of baking soda
  • A pinch of salt
  • 1–2 tablespoons ghee
  • Water, as required
  • Oil, for deep frying

Choosing the Right Bananas

Use ripe bananas for the best Mangalore Buns. Well-ripened bananas are naturally sweet and mash easily, while also providing moisture and softness to the dough.

How to Make Mangalore Buns Dough

Step 1: Mash the Bananas

Peel the ripe bananas and place them in a large bowl. Mash them thoroughly until you get a smooth mixture without large pieces.

Step 2: Prepare the Dough

Add sugar, yogurt, ghee, cumin seeds, salt, and a pinch of baking soda to the mashed banana. Mix everything well.

Gradually add the all-purpose flour and knead the mixture into a soft dough. Add very little water only if necessary. The dough should be soft and slightly sticky rather than stiff.

Step 3: Rest the Dough

Apply a little oil or ghee over the dough and cover the bowl. Allow it to rest for at least 6–8 hours, preferably overnight.

Resting is an important step because it helps develop the characteristic soft and fluffy texture of Mangalore Buns.

How to Make Mangalore Buns

After resting, knead the dough gently once again. Divide it into equal-sized portions and roll each portion into a ball.

Dust the rolling surface lightly with flour. Roll each ball into a small, thick round. Unlike regular puris, Mangalore Buns should not be rolled too thin.

Heat oil in a deep kadai over medium heat. Carefully place one rolled bun into the hot oil.

Gently press the top with a slotted spoon while frying. This helps the bun puff up. Turn it over and fry until both sides become golden brown.

Remove the bun and place it on a plate lined with paper towels to absorb excess oil. Repeat with the remaining dough.

Tips for Soft & Fluffy Mangalore Buns

  • Use fully ripe bananas for better flavor and softness.
  • Do not make the dough too hard.
  • Avoid adding too much water while kneading.
  • Allow the dough to rest for several hours.
  • Roll the buns slightly thick for a fluffy center.
  • Keep the oil at medium heat while frying.
  • Fry one or two buns at a time to maintain consistent oil temperature.

What to Serve with Mangalore Buns

Mangalore Buns are delicious on their own, but they can also be paired with savory accompaniments. Coconut chutney is a classic option, while vegetable sagu and sambar make the meal more filling.

For a simple breakfast or evening snack, serve freshly fried Mangalore Buns with hot tea or South Indian filter coffee.
