How to Make Tandoori Chicken
Step 1: Prepare the Chicken
Wash and pat the chicken pieces dry. Make 2–3 deep cuts in each piece. These cuts help the marinade penetrate deeper into the chicken.
Step 2: Make the Marinade
In a large bowl, combine yogurt, lemon juice, ginger-garlic paste, Kashmiri red chili powder, turmeric, cumin, coriander powder, garam masala, black pepper, salt, oil, and kasuri methi.
Mix everything into a smooth marinade.
Step 3: Marinate the Chicken
Add the chicken pieces to the marinade and coat them thoroughly, making sure the mixture gets into the cuts.
Cover and refrigerate for at least 4 hours. For deeper flavor, marinate overnight.
Step 4: Preheat the Oven
Preheat the oven to 220°C (425°F). Place a wire rack over a baking tray and lightly grease the rack.

Step 5: Cook the Chicken
Arrange the marinated chicken pieces on the rack without overcrowding them.
Bake for about 25–35 minutes, turning the pieces halfway through. Cook until the chicken is thoroughly cooked and the outside develops dark, slightly charred edges.
For extra char, broil or grill the chicken for the final 2–4 minutes while watching it carefully.
The safest way to check doneness is with a food thermometer: the thickest part of the chicken should reach 74°C (165°F).
Step 6: Serve
Remove the chicken from the oven and rest for a few minutes. Garnish with fresh coriander and serve with onion slices, lemon wedges, and mint chutney.
Traditional Tandoor Method
If using a traditional clay tandoor, heat the tandoor thoroughly before cooking. Place the marinated chicken on skewers and cook at high heat until the outside is charred and the inside is fully cooked.
The intense heat gives traditional tandoori chicken its distinctive smoky flavor and charred surface.
Tips for Perfect Tandoori Chicken
- Use thick yogurt so the marinade sticks well to the chicken.
- Make deep cuts in the chicken for better marination.
- Marinate for at least 4 hours whenever possible.
- Kashmiri chili powder provides vibrant color without making the dish excessively spicy.
- Avoid overcrowding the baking tray.
- Finish under high heat for lightly charred edges.
- Always ensure the chicken reaches a safe internal temperature before serving.
