Spicy Chicken Curry Recipe – Easy & Delicious at Home

Chicken curry is one of the most loved Indian comfort foods, and a spicy version brings together tender chicken, aromatic whole spices, onions, tomatoes, ginger, garlic and green chillies in a rich, flavorful gravy. This Spicy Chicken Curry Recipe is easy enough for a home kitchen while delivering the bold taste of a restaurant-style curry.

The secret to a delicious chicken curry is building the masala patiently. Sautéing the onions well, cooking the ginger-garlic paste until the raw aroma disappears, and simmering the chicken gently allow the meat to absorb the spices. Bone-in chicken can add extra depth to the curry, while the amount of chilli can be adjusted according to your preferred spice level.

How to Make Spicy Chicken Curry at Home

Step 1: Marinate the Chicken

Add the chicken to a large bowl. Mix in yogurt, ginger-garlic paste, turmeric, red chilli powder, lemon juice, salt and oil.

Coat the chicken thoroughly with the marinade and leave it for at least 30 minutes. If you have more time, refrigerating it for a few hours can give the chicken more flavor.

Step 2: Heat the Whole Spices

Heat oil in a heavy-bottomed pan or kadai over medium heat.

Add cumin seeds, bay leaf, cinnamon, cloves and cardamom. Let the spices sizzle for a few seconds until aromatic.

Step 3: Cook the Onions

Add the chopped onions and sauté until they turn golden brown.

This step is important because properly cooked onions form the foundation of the curry’s flavor. Avoid rushing this stage.

Step 4: Add Ginger, Garlic and Green Chillies

Add ginger-garlic paste and slit green chillies. Cook for 1–2 minutes until the raw smell disappears.

Keep the heat moderate so the paste does not burn.

Step 5: Prepare the Spicy Masala

Add the chopped or pureed tomatoes.

Then add coriander powder, cumin powder, Kashmiri chilli powder, black pepper and a little salt. Mix well and cook until the tomatoes soften and the masala becomes thick.

Cook until the oil begins to appear around the edges of the masala.

Step 6: Add the Marinated Chicken

Add the marinated chicken to the pan and mix thoroughly with the masala.

Cook over medium-high heat for about 5–7 minutes, stirring occasionally. This helps the chicken become well coated with the spicy masala.

Step 7: Add Water and Simmer

Pour in 1½–2 cups of hot water, depending on how much gravy you want.

Cover the pan and simmer on low to medium heat for about 20–30 minutes, or until the chicken is completely cooked and tender.

Stir occasionally and adjust the water if necessary.

Step 8: Finish the Curry

Once the chicken is cooked, add garam masala and mix gently.

Simmer uncovered for another 3–5 minutes to bring the gravy to your preferred consistency.

Turn off the heat and garnish with freshly chopped coriander leaves.

Let the curry rest for a few minutes before serving.

Tips for Making the Best Spicy Chicken Curry

  • Use bone-in chicken for a deeper and richer curry flavor.
  • Do not rush the onion-cooking stage.
  • Fresh ginger and garlic can give the curry a stronger aroma.
  • Adjust green chillies and red chilli powder according to your spice preference.
  • Cook the masala until the oil starts separating for a deeper flavor.
  • Use hot water instead of cold water when adding liquid to the curry.
  • Simmer the chicken rather than cooking it continuously over high heat.
  • Let the finished curry rest for 5–10 minutes before serving.
  • For a richer curry, finish with a small spoonful of ghee.

How to Make the Curry Extra Spicy

If you enjoy a very hot chicken curry, increase the number of green chillies and add a little more red chilli powder.

For a balanced spicy flavor rather than just heat, you can also add freshly ground black pepper and a small amount of roasted chilli-coriander powder.

Avoid adding too much chilli at once. It is easier to increase the heat gradually while cooking.

Dhaba-Style Chicken Curry

A dhaba-style version can be made with browned onions, tomatoes, whole spices and a generous amount of chilli and garam masala.

Kerala-Style Chicken Curry

For a South Indian variation, add curry leaves and coconut milk. Roasted coconut and spices can also be used to create a richer regional-style curry.

Coconut Chicken Curry

Add coconut milk toward the end of cooking for a creamy curry with a mild sweetness that balances the chilli heat.

Restaurant-Style Chicken Curry

For a richer restaurant-style gravy, cook the onion-tomato masala thoroughly and finish with a little butter, cream or ghee.

Common Mistakes to Avoid

Adding chicken before the masala is ready:
The curry may taste raw or lack depth. Cook the onion-tomato masala properly first.

Using too much water:
Excess water can make the curry thin and dilute the spices. Add gradually.

Cooking only on high heat:
High heat can burn the masala while leaving the chicken unevenly cooked. Use high heat briefly and then simmer.

Adding too much chilli:
Spice should complement the other flavors rather than overpower them.

Skipping the resting time:
Allowing the curry to rest for a few minutes helps the flavors settle.
