Rasmalai is a popular Indian dessert made with soft, spongy cheese dumplings soaked in sweet, creamy and fragrant milk. Traditionally prepared using fresh chhena, Rasmalai is flavoured with cardamom, saffron and chopped nuts, making it a luxurious dessert for festivals and special occasions.

The combination of delicate chhena balls and rich rabri-like milk gives Rasmalai its signature texture and taste. Although it may look like a complicated sweet, you can make delicious Rasmalai at home with a few simple ingredients and the right techniques.

The most important steps are preparing smooth chhena, kneading it properly and cooking the dumplings gently so they become soft and spongy.

Ingredients for Rasmalai

For the Chhena Balls

  • 1 litre full-fat milk
  • 2–3 tablespoons lemon juice
  • 1 tablespoon water
  • 1 teaspoon semolina, optional
  • 1 teaspoon sugar, optional

For the Sugar Syrup

  • 1½ cups sugar
  • 4 cups water
  • 2–3 cardamom pods

For the Rabri

  • 1 litre full-fat milk
  • 4–5 tablespoons sugar
  • 4–5 saffron strands
  • ½ teaspoon cardamom powder
  • 1 tablespoon chopped pistachios
  • 1 tablespoon chopped almonds
  • 1 tablespoon chopped cashews, optional

How to Make Rasmalai at Home

Step 1: Prepare the Chhena

Pour the milk into a heavy-bottomed pan and bring it to a boil.

Reduce the heat and gradually add lemon juice mixed with a little water. Stir gently until the milk curdles and the greenish whey separates from the milk solids.

Turn off the heat and allow it to sit for a minute.

Line a strainer with a clean muslin cloth and pour the curdled milk through it. Rinse the chhena with fresh water to remove the sourness from the lemon juice.

Gather the cloth and gently squeeze out the excess water. Hang or place the chhena in the strainer for around 30 minutes.

The chhena should be moist but not dripping wet.

Step 2: Knead the Chhena

Transfer the chhena to a clean plate and knead it with the heel of your palm.

Continue kneading for about 8–10 minutes until it becomes smooth and soft.

If desired, add a little semolina to help bind the mixture.

Divide the mixture into equal portions and roll them into smooth balls. Flatten them gently to create small discs.

Make sure there are no cracks on the surface, as cracked discs may break while cooking.

Step 3: Prepare the Sugar Syrup

Add sugar, water and cardamom pods to a wide pan.

Bring the mixture to a rolling boil and stir until the sugar dissolves completely.

The syrup should remain relatively thin rather than becoming thick like a one-string sugar syrup.

Step 4: Cook the Rasmalai Discs

Carefully place the chhena discs into the boiling sugar syrup.

Cover the pan and cook over medium heat for about 12–15 minutes.

The discs will expand and become soft and spongy.

Turn off the heat and allow them to cool slightly in the syrup.

Step 5: Prepare the Flavoured Milk

Pour one litre of full-fat milk into a heavy-bottomed pan.

Bring it to a boil and then simmer over low to medium heat. Stir occasionally to prevent the milk from sticking to the bottom.

Continue simmering until the milk reduces slightly and becomes creamy.

Add sugar, saffron and cardamom powder. Mix well.

Add chopped almonds, pistachios and other nuts according to your preference.

Step 6: Combine the Rasmalai

Gently squeeze each cooked chhena disc between your palms or using a spoon to remove some of the excess sugar syrup.

Place the discs into the warm flavoured milk.

Allow them to soak for at least 2–3 hours in the refrigerator so that they absorb the creamy milk and become flavorful.

For the best taste, serve chilled.

Tips for Soft & Spongy Rasmalai

  • Use full-fat milk: It produces rich and good-quality chhena.
  • Do not make the chhena too dry: Slightly moist chhena helps produce soft Rasmalai.
  • Knead thoroughly: Smooth chhena is essential for soft, crack-free discs.
  • Keep the sugar syrup thin: The Rasmalai needs enough liquid to expand while cooking.
  • Avoid overcooking: Excessive cooking can make the chhena discs firm or rubbery.
  • Use wide cookware: This gives the discs enough room to expand.
  • Chill before serving: Refrigerating the Rasmalai allows the milk to soak into the chhena.

How to Serve Rasmalai

Serve Rasmalai chilled in small bowls with plenty of saffron-infused milk.

Garnish with chopped pistachios, almonds and a few saffron strands for an attractive finish.

It is especially popular during festivals, weddings, family celebrations and special occasions. You can also serve it after a traditional Indian meal as a rich and refreshing dessert.
