Homemade Chicken Biryani Recipe – Flavorful & Delicious
Biryani is one of India’s most loved rice dishes, known for its fragrant basmati rice, tender chicken, aromatic whole spices, herbs and rich masala. A good Biryani Recipe is all about balancing the spices and cooking the rice carefully so that every grain remains fluffy and separate.
This easy chicken biryani recipe follows a layered, dum-style method. The chicken is marinated with yogurt and spices, the basmati rice is partially cooked separately, and both are layered with fried onions, mint, coriander and saffron before being finished on low heat. Cooking the rice to around 60–70% before the final dum stage helps prevent mushy biryani.

How to Make Chicken Biryani
Step 1: Marinate the Chicken
Add chicken to a large bowl. Mix in yogurt, ginger-garlic paste, chilli powder, turmeric, coriander powder, biryani masala, green chillies, lemon juice, salt, mint and coriander.
Coat the chicken thoroughly with the marinade. Cover and refrigerate for at least 1 hour. For deeper flavour, you can marinate it for several hours.

Step 2: Prepare Fried Onions
Heat oil in a pan and add thinly sliced onions.
Fry them over medium heat until they become evenly golden and crisp. Remove them onto a plate lined with kitchen paper.
These fried onions, often called birista, add sweetness, texture and depth to the finished biryani.

Step 3: Soak the Rice
Wash the basmati rice gently two or three times until the water becomes clearer.
Soak the rice for around 30 minutes and drain.
Step 4: Parboil the Rice
Bring plenty of water to a boil in a large pot. Add salt, bay leaves, cardamom, cloves, cinnamon and other whole spices.
Add the soaked rice and cook until it is approximately 60–70% cooked. The grain should be soft on the outside but still have a firm centre.
Drain the rice immediately. It will finish cooking during the dum stage. Overcooking the rice at this stage can result in soft or mushy biryani.
Step 5: Cook the Chicken Masala
Heat oil and ghee in a heavy-bottomed pot.
Add bay leaf, cardamom, cloves, cinnamon, star anise and cumin seeds. Let the whole spices release their aroma.
Add the marinated chicken and cook over medium heat.
Cook until the chicken is almost done and the masala becomes thick. Keep some moisture in the bottom of the pot because the gravy helps steam the rice during dum cooking.
Step 6: Layer the Biryani
Spread the chicken and masala evenly across the bottom of the pot.
Add a layer of partially cooked basmati rice over the chicken.
Sprinkle fried onions, mint and coriander over the rice.
Mix saffron with warm milk and drizzle it over the top. Add a little ghee for extra richness.
If your pot is large enough, you can create another layer of rice and toppings.
Step 7: Dum Cook the Biryani
Cover the pot tightly with a lid. You can use foil underneath the lid if the pot does not seal properly.
Place the pot on very low heat. Using a tawa underneath the pot can help distribute heat evenly and reduce the risk of burning the bottom.
Cook for approximately 20–25 minutes on low heat. Do not repeatedly open the lid because the trapped steam is important for finishing the rice and bringing the flavours together.
Step 8: Rest Before Serving
Turn off the heat and allow the biryani to rest, covered, for about 10 minutes.
Open the lid and gently lift the rice from the bottom using a flat spoon. Avoid vigorous stirring because it can break the cooked rice grains.
Tips for Making Perfect Biryani
Don’t Overcook the Rice
The rice should only be partially cooked before layering. It continues cooking during dum.
Use Good-Quality Basmati Rice
Long-grain basmati gives biryani its characteristic aroma and separate grains.
Marinate the Chicken
Yogurt, spices and lemon juice help flavour the chicken deeply. Longer marination can produce a more flavourful result.

Don’t Make the Masala Too Watery
A watery chicken gravy can make the rice soggy. The chicken base should be thick but still moist enough to generate steam.
Use Fried Onions
Golden fried onions provide sweetness and a rich savoury flavour that complements the spices.
Cook on Low Heat
Dum cooking works through gentle steam. High heat can burn the bottom while leaving the upper rice unevenly cooked.
What to Serve With Chicken Biryani
Chicken biryani pairs especially well with:
- Onion raita
- Cucumber raita
- Boondi raita
- Mirchi ka salan
- Biryani shorba
- Sliced onions and lemon
- Mixed vegetable raita
- Pickle
A simple cooling raita is especially useful alongside spicy biryani.
