Vegetable pulao is a simple, fragrant and comforting Indian rice dish made with basmati rice, colourful vegetables and aromatic whole spices. It is an easy one-pot meal that can be prepared for lunch, dinner, lunch boxes or family gatherings. Unlike biryani, vegetable pulao is generally milder and quicker to prepare, making it ideal for an everyday meal.

This Vegetable Pulao Recipe combines fluffy basmati rice with carrots, beans, peas and potatoes, along with ginger, green chilli and fragrant spices. A little ghee adds richness while fresh coriander and mint give the finished pulao a refreshing aroma.

Ingredients for Vegetable Pulao

For the Rice

  • 1½ cups basmati rice
  • 2¼–2½ cups water
  • 1 tablespoon lemon juice, optional
  • Salt to taste

Long-grain basmati is a good choice for pulao because it produces fragrant, relatively separate grains when cooked correctly.

For the Vegetables

  • ½ cup carrots, diced
  • ½ cup green beans, chopped
  • ½ cup green peas
  • ½ cup potato, diced
  • ¼ cup sweet corn, optional
  • ¼ cup cauliflower, optional
  • 1 medium onion, thinly sliced
  • 1–2 green chillies, slit

You can adjust the vegetables depending on what is available. Carrot, beans, peas and potato are commonly used in vegetable pulao.

For the Whole Spices

  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 3 green cardamoms
  • 3–4 cloves
  • ½ teaspoon black peppercorns
  • 1 star anise, optional

For the Masala

  • 1 teaspoon ginger-garlic paste
  • ½ teaspoon turmeric powder
  • ½ teaspoon garam masala
  • ½ teaspoon coriander powder

  • 2 tablespoons chopped mint leaves

Optional Garnish

  • Fried onions
  • Roasted cashews
  • Fresh coriander
  • Fresh mint
  • Lemon wedges

How to Make Vegetable Pulao

Step 1: Wash and Soak the Rice

Wash the basmati rice gently two or three times until the water becomes relatively clear.

Soak the rice in enough water for about 20 minutes.

Drain the rice completely and keep it aside.

Soaking helps the rice cook more evenly and can help produce longer, fluffier grains.

Step 2: Prepare the Vegetables

Wash and chop the vegetables into small, similar-sized pieces.

Keeping the pieces reasonably uniform helps them cook at a similar rate.

If using frozen peas or corn, they can be added directly during cooking.

Step 3: Heat the Ghee and Whole Spices

Heat ghee or oil in a heavy-bottomed pot over medium heat.

Add cumin seeds, bay leaf, cinnamon, cardamom, cloves, black peppercorns and star anise.

Sauté for 30–60 seconds until the spices become fragrant.

Whole spices are an important part of pulao because they provide aroma without making the dish excessively spicy.

Step 4: Sauté the Onion

Add the sliced onion and sauté until it becomes soft and lightly golden.

Add ginger-garlic paste and green chillies.

Cook for another minute until the raw aroma of the ginger and garlic disappears.

Step 5: Add the Vegetables

Add the chopped carrots, beans, peas, potatoes and any other vegetables you are using.

Add turmeric, coriander powder and a little salt.

Sauté the vegetables for about 3–4 minutes.

Do not cook them completely at this stage because they will continue cooking with the rice.

Step 6: Add the Rice

Add the drained basmati rice to the pot.

Gently mix the rice with the vegetables and spices for 1–2 minutes.

Avoid stirring aggressively because the soaked rice grains can break easily.

Step 7: Add Water and Cook

Pour in the measured water and add salt.

Mix gently once.

Bring the mixture to a boil, then reduce the heat to low.

Cover the pot tightly and cook until the rice absorbs the water and becomes tender.

Depending on the rice and cooking vessel, this generally takes around 12–18 minutes.

Step 8: Rest the Pulao

Turn off the heat once the rice is cooked.

Keep the pot covered and allow the pulao to rest for 5–10 minutes.

This resting period allows the remaining steam to finish the rice and helps maintain a fluffy texture.

Step 9: Fluff and Garnish

Open the lid and gently fluff the rice with a fork.

Add chopped coriander and mint.

You can also garnish the pulao with roasted cashews or fried onions for extra flavour and texture.

Tips for Perfect Vegetable Pulao

Use Good-Quality Basmati Rice

Long-grain basmati gives pulao its characteristic fragrance and fluffy texture.

Measure the Water Carefully

Too much water can make the rice soft and sticky, while too little can leave the grains undercooked.

Don’t Over-Stir

Once the rice is added, mix gently. Excessive stirring can break the grains.

Don’t Overcook the Vegetables

The vegetables should remain tender but retain some texture rather than becoming mushy.

Cook on Low Heat

Once the water starts boiling, reduce the flame and allow the rice to cook slowly.

Let It Rest

Don’t immediately open and stir the pulao after switching off the heat. Allowing it to rest covered helps the grains finish steaming.

What to Serve With Vegetable Pulao

Vegetable pulao can be enjoyed on its own or paired with:

  • Cucumber raita
  • Boondi raita
  • Plain curd
  • Onion raita
  • Mixed vegetable raita
  • Mango pickle
  • Papad
  • Dal
  • Paneer curry
  • Vegetable kurma

For a simple meal, serve hot pulao with cucumber raita, pickle and papad.
