How to Make Authentic Mangalorean Chicken Ghee Roast at Home
Mangalorean Chicken Ghee Roast is one of the most loved dishes from the coastal cuisine of Karnataka. Known for its deep red colour, rich aroma and bold combination of roasted spices, this chicken dish gets its distinctive taste from generous amounts of ghee and a freshly prepared masala.
Unlike ordinary chicken curries, ghee roast has a thick, coating-style masala that clings beautifully to every piece of chicken. The roasted chillies provide colour and heat, while tamarind adds a subtle tangy note that balances the richness of the ghee.
This popular Mangalorean recipe is perfect for weekend lunches, family dinners and special occasions. It tastes especially delicious with Neer Dosa, steamed rice, chapati or Mangalore-style buns.

How to Make Mangalorean Chicken Ghee Roast

Step 1: Marinate the Chicken
Clean the chicken thoroughly and pat it dry. In a bowl, combine yogurt, ginger-garlic paste, turmeric, red chilli powder, lemon juice and salt.
Add the chicken pieces and mix well until they are evenly coated. Cover and refrigerate for at least 30 minutes. For deeper flavour, you can marinate the chicken for 2–3 hours.
Step 2: Roast the Spices
Heat a dry pan over low to medium heat. Add dried red chillies, coriander seeds, cumin seeds, fenugreek seeds, peppercorns, cloves, cinnamon, cardamom and fennel seeds.
Roast the spices gently until they become aromatic. Be careful not to burn them, as burnt spices can make the masala bitter.
Allow the roasted spices to cool completely.
Step 3: Prepare the Masala
Transfer the roasted spices to a blender. Add garlic and tamarind along with a little water.
Blend into a smooth, thick paste. The masala should have a rich red colour and a strong roasted aroma.
Step 4: Cook the Chicken
Heat 1–2 tablespoons of ghee in a wide pan. Add the marinated chicken pieces and cook over medium heat until they are lightly browned and almost cooked through.
Remove the chicken and keep it aside.
Step 5: Prepare the Ghee Roast
In the same pan, add the remaining ghee. Add sliced onion and curry leaves and sauté until the onion turns soft.
Add the freshly ground masala and cook on low heat. Stir frequently and allow the masala to cook until the raw smell disappears and the ghee begins to separate from the mixture.
Add the cooked chicken and mix thoroughly so that the thick masala coats every piece.
Cook for another 5–8 minutes on low heat. Adjust the salt and consistency according to your preference.

Tips for Making Perfect Chicken Ghee Roast
- Use bone-in chicken: It gives the dish better flavour and keeps the chicken juicy.
- Roast spices carefully: Low heat helps release their aroma without burning them.
- Use good-quality ghee: Ghee is one of the key ingredients responsible for the dish’s signature flavour.
- Balance the heat: Byadgi chillies provide beautiful colour, while hotter red chillies can be adjusted according to taste.
- Do not add too much water: Chicken Ghee Roast is traditionally thick and masala-coated rather than gravy-like.
- Cook the masala well: Allowing the masala to roast in ghee develops the deep flavour associated with this dish.
