How to Make Vegetarian Chili

1. Sauté the Aromatics

Heat olive oil in a large pot or Dutch oven over medium heat.

Add the chopped onion and cook for 3–4 minutes until softened. Add the minced garlic and green chilli, if using, and sauté for another 30 seconds.

2. Add the Vegetables

Add the chopped bell pepper and diced carrot.

Cook for approximately 4–5 minutes, stirring occasionally, until the vegetables begin to soften.

3. Add the Spices

Add chili powder, cumin, paprika, oregano and black pepper.

Stir well and cook for about 30 seconds. Toasting the spices briefly helps release their aroma and flavour.

4. Add Tomatoes and Beans

Add the chopped tomatoes, tomato paste, kidney beans, black beans and corn.

Pour in the vegetable broth and stir everything together.

5. Simmer the Chili

Bring the mixture to a gentle boil, then reduce the heat to low.

Cover partially and simmer for approximately 25–30 minutes, stirring occasionally.

As the chili cooks, the vegetables will become tender and the flavours will come together.

6. Adjust the Consistency

If the chili is too thick, add a little more vegetable broth or water.

If it is too thin, simmer uncovered for another 5–10 minutes until it reaches your preferred consistency.

Taste and adjust the salt and spices.

How to Serve Vegetarian Chili

Ladle the hot chili into bowls and add your favourite toppings.

Try serving it with:

  • Fresh coriander
  • Grated cheddar cheese
  • Sour cream or Greek yogurt
  • Diced avocado
  • Sliced green onions
  • Lime juice
  • Warm bread or tortilla chips

For a complete meal, serve the chili with steamed rice, cornbread or crusty bread.

Tips for the Best Vegetarian Chili

  • Use a combination of beans for better texture and flavour.
  • Add extra vegetables such as zucchini, mushrooms or sweet potato.
  • Adjust the chili powder according to your preferred spice level.
  • Let the chili simmer longer for a deeper flavour.
  • For a thicker consistency, mash a small portion of the beans before serving.
  • A squeeze of fresh lime juice at the end can brighten the overall flavour.

Easy Variations

Spicy Vegetarian Chili
