Chicken Lollipop is a popular Indo-Chinese chicken starter known for its crispy exterior, juicy meat and spicy, flavorful coating. Made from specially prepared chicken wings or drumettes, this restaurant-style appetizer is a favourite at parties, family gatherings and casual dinners.

The chicken is first marinated with ginger-garlic, chilli and aromatic spices before being coated in a seasoned batter. It is then fried until golden and crisp. For an extra burst of flavour, the fried lollipops can be tossed in a spicy sauce made with garlic, chilli and soy sauce.

With the right marination and frying technique, you can easily recreate crispy Chicken Lollipop at home.

How to Make Chicken Lollipop at Home

Step 1: Prepare the Chicken

Clean the chicken lollipop pieces thoroughly and pat them dry using a kitchen towel.

Keeping the chicken relatively dry before marination helps the seasonings stick properly.

Step 2: Marinate the Chicken

Place the chicken pieces in a large bowl.

Add ginger-garlic paste, red chilli powder, turmeric, coriander powder, black pepper, soy sauce, vinegar and salt.

Mix thoroughly so that every piece is evenly coated.

Cover and refrigerate for at least 30 minutes. For deeper flavour, you can marinate the chicken for 2 hours.

Step 3: Prepare the Coating

In another bowl, combine all-purpose flour, corn flour, rice flour, red chilli powder, black pepper and salt.

Add the egg and mix well. Gradually add water to create a thick, smooth batter.

The batter should be thick enough to coat the chicken without becoming excessively runny.

Step 4: Coat the Chicken

Remove the marinated chicken from the refrigerator.

Dip each piece into the prepared batter and coat it evenly.

Make sure the batter covers the chicken properly, as this helps create a crispy outer layer during frying.

Step 5: Fry the Chicken Lollipops

Heat enough oil in a deep pan over medium heat.

Once the oil is hot, carefully add the coated chicken pieces in batches. Avoid overcrowding the pan, as this can lower the oil temperature and make the coating less crispy.

Fry until the chicken turns golden brown and is completely cooked inside.

Remove the lollipops using a slotted spoon and place them on a wire rack or paper towel to drain excess oil.

Step 6: Prepare the Spicy Sauce

Heat a tablespoon of oil in a wok or wide pan.

Add chopped garlic and green chillies. Stir-fry for a few seconds until fragrant.

Add chopped onion and cook until slightly softened.

Add soy sauce, chilli sauce, tomato ketchup and vinegar. Stir everything together and cook for about a minute.

Step 7: Toss the Chicken

Add the fried Chicken Lollipops to the sauce.

Toss quickly over high heat so that the sauce lightly coats the crispy chicken.

Turn off the heat and garnish with chopped spring onion greens.

Serve immediately.

Tips for Crispy Chicken Lollipop

  • Pat the chicken dry: Excess moisture can prevent the coating from becoming crisp.
  • Marinate properly: Give the chicken at least 30 minutes to absorb the flavours.
  • Make a thick batter: A thin batter may slide off during frying.
  • Maintain medium heat: Very high heat can brown the outside before the chicken cooks through.
  • Do not overcrowd the pan: Fry in small batches for a crispier result.
  • Serve immediately: Chicken Lollipop tastes best while hot and crispy.
  • Use a wire rack: Draining the fried chicken on a rack helps prevent the coating from becoming soggy.

How to Serve Chicken Lollipop

Chicken Lollipop is best served hot as a starter or party snack. Garnish it with spring onions, coriander or sliced green onions.

Serve it with red chilli sauce, schezwan chutney, tomato ketchup or a spicy dipping sauce.

For an Indo-Chinese meal, pair it with fried rice, Hakka noodles or vegetable noodles.

Chicken Lollipop Variations

Spicy Schezwan Chicken Lollipop

Toss the fried chicken with Schezwan sauce, garlic and spring onions for a fiery version.

Dry Chicken Lollipop

Skip the sauce toss and serve the crispy fried lollipops with a spicy dipping sauce.

Grilled Chicken Lollipop

Instead of deep-frying, marinate the chicken and cook it in an oven, air fryer or grill until cooked and lightly charred.
